The chakki atta is preferred more than the roller mill atta for the texture and taste of the Chapati/Roti (flat bread of India). Indian atta is a very very finely milled wheat flour but Chakki alters the starch (the force is intense) which is not good for western bread making but great for indian bread chapati/roti.
Chakki is an age old method of making Atta from whole grain wheat. Chakki is made of stone and it operates by turning the handle. Wheat is added to the moving stone wheels which then grinds and make flour. You may have seen the word Chakki on some packets/bags of flour, Chakki Atta is manually grinded flour.
